Abstract

The content of Ca、Mg、Fe、Cr、Se、Pb and As in tea was determined by high-pressure digestion and ICP-AES analysis. The minerals' leaching property was further investigated by simulating the real manner of tea drinking in consideration of extraction cycle, time and temperature. Results showed that the tea tested contained higher contents of Ca、Mg、Fe,in comparison with Cr、Se、Pb and As appeared at very low content in the tea, which were almost unable to be determined by ICP.Treatment at 90℃ for 15 min might promote the leaching out of minerals.
