Abstract
The influence of immersion solid-liquid ratio,particle size and immersion time in physical extraction of yam was studied,while the influence of enzymatic hydrolysis solid-liquid ratio of α-amylase and glucoamylase,enzymolysis time,enzymolysis temperature was studied.The result showed that the best optimum conditions of extracting dietary fiber of yam were 1:4 immersion solid-liquid ratio,immersion time 3h,200 mesh in immersion;1:8 solid-liquid ratio,enzymolysis time 1h,enzymolysis temperature 65℃ in enzymatic hydrolysis and the extraction rate was 20.19%.
