Comparative Study on Free Amino Acid Composition and Content between Two Ecological Groups of Japanese Grenadier Anchovy,Coilia nasus(River-anchovy and Sea-anchovy)

Abstract

The taste of two ecological types of Japanese grenadier anchovy,Coilia nasus(river anchovy and sea anchovy) was evaluated by measuring their free amino acid(FAA) contents with the HPLC method.FAA profile between river-anchovy and sea-anchovy is similar,but the content of them is significantly different.For river anchovy and sea anchovy,the total FAA content is 397.01 mg/100 g fresh sample and 370.03 mg/100 g fresh sample,and the total free essential amino acid is 47.24 mg/100 g fresh sample and 53.92 mg/100 g fresh sample,respectively.River anchovy possesses the lower percentage of 4 delicious amino acids(Glu,Asp,Gly,Ala) than sea-anchovy;but the taurine content of river-anchovy(265.43 mg/100 g) is significantly higher than that of sea anchovy(200.93 mg/100 g)(P0.05).
