Abstract

Xylanase has been widely used in the processing of food, pharmaceuticals, the clarification of wine, the bleaching of pulp and other industries, of which the thermostability plays a vital role in its application in industrial field.According to the catalytic domain of amino acid composition, xylanase is divided into F / 10 and G / 11 families. This article summarizes the method and technique for molecular modification of xylanase thermostability of the two families and provides a reference for further improvement of the thermostability.
