Abstract
The extraction of beta-carotene from carrot was conducted through immersion method by organic solvent.The optimal extractant was selected by comparing the extraction efficiency of different solvents and the extraction technology was optimized.The results showed that the optimum extraction conditions were as follows:with acetone-methanol(V∶V=7∶2) as extractant,ratio of solid to liquid(g∶mL) of 1∶4,extraction temperature of 40 ℃,extraction time of 1 h.Then the extraction liquor obtained under above conditions was extracted by petroleum ether for two times,and the extraction rate of beta-carotene reached 6.32%.
