Abstract
Mensurate the contents of total phenolic in different apple extracts and study the antioxidant activity. By the folin-ciocalteau, mensurate the contents of total phenolic in different positions of different apple; the antioxidant activities of apple polyphenol extracts were comparative studied by determining the deoxidizing capacity, antioxidant activity, effect of antilipoperoxidation . Apple polyphenol extracts had stronger deoxidizing capacity, antioxidant activity and scavenging effects on superoxide anion radical generated by lipid-peroxidation reaction. In the range of test concentration, apple polyphenol excels dibutylhydroxytoluene in the maximal inhibition percentage. The apple polyphenol extracts was an excellent natural antioxidant and free radicals scavenger.
