Abstract
This research intended to extract high purity starch(protein0.4%) from early indica rice by using composite method of alkali and enzyme.This research found out that the optimum technology conditions for extracting rice starch by using ultrasonic-assisted enzymatic method were as follows: time of ultrasonic treatment was 25 min;enzyme adding dosage was 5 mg/g;time of enzymolysis was 2 h;temperature of enzymolysis was 45℃;proportion of solid and liquid was 1:4.Under this optimum conditions,the extraction rate of rice starch reached 91.2%,and the purity of it was 98.7%.
