Abstract
In this study,optimum condition of microwave–assisted extraction of tea polyphenols was optimized by orthogonal test. On the basis of single–factor test,the L9(34) orthogonal test was establiched about the dependent variable(extraction yield of tea polyphenols) and independent variables(ethanol concentration,microwave time,microwave power,ratio of material to water).The optimum extraction conditions as follow:ethanol concentration 60%,material to water 1∶6,time 25 s,microwave power 360 W. Under the condition,the yield of tea polyphenols was 27.64%.
