Abstract

The production and effect of extracellular hydroxyl radical scavengers from submerged culture of Lentinula edodes on lignocellulose substance were studied in this paper.Results showed that the supernatant of lignocellulose has remarkable OH scavenging ability,and the maximum scavenging efficiency reached 69.32%.Crude exopolysaccharides were the main OH scavenger.Its maximum scavenging efficiency reached 54.19%,which accounted for 78.17% of the total OH removal.Furthermore,crude protein also played important roles in OH scavenging.Its maximum scavenging efficiency reached 27.17%,which accounted for 39.38% of the total OH removal.
