Abstract

The physical properties and component of Granny Smith apple seeds were detected. The seed oil was extracted by SFE-CO2 and physicochemical indexes of the oil was detected. The result indicated that the apple seed was rich in crude protein and crude fatty, and the obtaining rates was 20.82% under the optimal conditions of extracting oil by SFE-CO2.Furthermore,the oil of apple seed was rich in unsaturated fatty acids,in which the content of linoleic acid was 50.70%.
