Abstract
Some physiological and alcohol zymolytic properties of the Saccharomyces cerevisiae Y01 were investigated by sugarcane juice medium.The results indicated that it could produce alcohol in sugarcane juice medium.The activity of invertase was 237.84 μmol/min·mL.The optimum growth temperature was 30 ℃,genenration time was 1.8 h,optimum ferment temperature was 32 ℃.The level of alcohol tolerance was 14%,and the level of sugar tolerance was 35%.Its alcohol yield could reach 10.63% after fermenting for 72 h in the sugarcane juice fermentation medium containing 18% sugar.
