Abstract
To establish the method of high performance liquid chromatography for determination of antioxidants butylated hydroxyanisole(BHA),butylated hydroxytoluene(BHT)and tertiary butyl hydroquinone(TBHQ) and propyl gallate(PG)in meat products.The antioxidants of samples were extracted with methanol and then filtered 0.5 μm of filter membrane for HPLC analysis.The limit of this method were 5 mg/kg for BHA,the limit of this method were 2 mg/kg for BHT and TBHQ and PG.The average recoveries of three different fortified samples were in the range of 85 %-101 %,RSDS were in range of 3.6 % to 6.1 %.The method is accurate,simple and rapid.It can be used to determine the concentration antioxidants in meat products.
