Research Progress of Natural Food Pigment

Food pigment plays a decisive role in the development of food industry and has a closed relationship with people' s daily lives.Now more and more problems with food safety have been exposed,natural food pigment has become a hot research topic both in edible and medicinal irreplaceable role.It is expected to gradually replace the chemical pigment,widely used in the food industry.This paper describes the types of natural food pigment,extraction methods,and development trends,aiming to provide a reference for the research and application of natural plant pigments.
