Abstract
Strong gluten wheat cultivar Jimai 20 was used to study the effects of irrigation time, and application of sulphur and zinc on grain yield and protein quality of wheat.Experiment of three irrigation treatments and three fertilizer treatments in a field with rain shelter in Beijing. The results showed that irrigation at the late stage of wheat growth period, especially at the flowering stage, could suppress degrading of chlorophyll's,keep the N content in flag at high level, prolong the function stage of flag, and applying fertilizer of sulphur and zinc had the same function as above. The grain yield, test weight, thousand grain weight were the highest when irrigated at anthesis, and significantly(P0.05) higher than those irrigated at the 2~(nd) and 5~(th) leaf emergence, and they all increased with delaying of irrigation time. There were no difference on grain yield and its components with the three fertilizer treatments. The crude protein content and its components, except gliadin, decreased with the delaying of irrigation time, and the maximum value appeared. When irrigated at the 2~(nd) leaf emergence, the application could increase the crude protein content and glutenin significantly(P0.05),but there was no significant difference with zinc treatment.Overall, for strong gluten under the drought condition, irrigating at the 5~(th) leaf emergence could coordinate the quality with the yield.
