Abstract
In order to find the key problems that have to be solved before slaughter in high quality beef production, the effects of breed, age and live weight on beef performance were investigated on the same feed plane. The results demonstrated that breed had significant effects on beef quality and yield, beef quality from Jinnan cattle was the best in this trails, age mainly influenced on beef quality and beef from the cattle of 2~2.5 years old had the best tenderness. Live weight also significantly affected on beef yield. Those means that improved breeds, and younger cattle with larger live weight should be selected to improve beef performance.
