Abstract
Effects of different storage conditions on the content of nitrate and nitrite were investigated in this paper.Representational vegetables of cabbage,green pepper and carrot were stored under 4℃ and-4℃ respectively.The nitrate and nitrite contents in vegetables were detected during the storage process.The results suggestted the concentration of nitrite in vegetables was increased obviously under cold storage and freezing temperatures while nitrate was decreased.The change of nitrite in vegetable preserved in cold storage was more obvious than that in freezing temperatures.
