Abstract

To optimize the ultrasonic extraction of tea polyphenols from green tea,the response surface methodology with three factors at three levels was adopted,and the factors influencing the process parameters were determined by regression analysis.The results showed that the optimum conditions for the ultrasonic extraction were as follows: ratio of solvent to material = 40.2 mL/g,ultrasonic power = 478 W,working time = 15.1 min,and the extraction yield of tea-polyphenols from green tea = 10.312%.
