Analysis and comparison on the nutritional components of Lates niloticus with other fish species

The content of nutritional components of Lates niloticus was measured and its nutritional value was compared with other fish species.The contents of crude protein,crude fat,ash and moisture in fresh muscles of L.niloticus were 192.4,13.2,10.4 and 783.6 mg·g-1 respectively.The composition of amino acids of muscle was 18 common amino acids and 8 essential amino acids for human needs.In dry sample,the total content of amino acids was 789.7 mg·g-1,the content of essential amino acids was 335.0 mg·g-1.The content of lysine was 79.0 mg·g-1,1.26 and 1.63 times greater than the standard of Amino Acids Score(AAS)and Chemical Score(CS)respectively.According to the evaluation in AAS and CS,the first limited amino acid was Cys+Met,and the second limited amino acid was Trp.The essential amino acids index(EAAI)was 73.16.In dry sample,the content of four delicious amino acids was 31.01%.The muscle of L.niloticus had rich fatty acids.The percentage of sub-oleic acid(C18:2),one kind of essential fatty acids for human needs,was 10.75%.The contents of EPA and DHA in fatty acids were 0.97% and 2.13%.The trace elements in muscle of L.niloticus were abundant and its composition was reasonable.Compared with other fish species,the protein,amino acid and essential fatty acid content in the meat of L.niloticus was higher,and the composition of amino acid and trace element was reasonable.It indicates that L.niloticus was one of freshwater fishes with high nutritive and healthy value.
