Abstract

Inulinase was produced by Aspergillus niger with solid-state fermentation for the first time.And single-factor tests and orthogonal experiment on the method of combining the enzyme fermentation conditions were studied.The results showed that the optimal conditions were: pH 6.5,fermentation time 6 d,loading capacity 20 g,yeast extract as nitrogen source and wheat bran as substrate.The yield of endonuclease and exonucle-ase were 56.31 U/g(dry weight) and 137.24 U/g(dry weight).
