Abstract
The large-scale yeast production applied with immobilized yeast was introduced in this paper.The result showed that: alcohol content was increased by 0.05%~0.1%.Fermentation period was 40~50hours with mixed malt and corn as raw material and 45~50hours with sweet pot-ato dried as raw material.The enzyme-producing ability was 8%~11%.The advantages and disadvantages of this technology were also disussed.
