Abstract
The structure-activity relationship and interaction between three flavonoids including Morin(MOR),Quercetin(QUE) and Rutin(RUT) and BSA were observed by UV-visible spectra and fluorescence quenching spectra.The results showed that the quenching and binding effect between flavonoids and BSA were strong when the.hydroxyl group was in the adjacent position of B benzene ring of nucleus.However,the quenching and binding effect between flavonoids and BSA decreased when a large group existed,which is due to the steric hindrances.
