Abstract
The present paper studies a new method to improve GABA accumulation as well as to reduce heavy metal content in germinated brown rice:using EDTA–CaNa2solution soak the brown rice before germination.When the concentration of EDTA–CaNa2 is 80 μg/mL(concentration of Ca2+ is about 0.2 mmol/L),and the soaking time is 10.5 h,the content of GABA in germinated brown rice increased by 42.4%,up to 63.36 mg/100g.And at the same time,EDTA–CaNa2 solution soaking can promote the remove of Cd,Pb from brown rice,but have little effect on the content of Zn.Thus,EDTA–CaNa2 not only improves enrichment of GABA in the germinated brown rice,and improves the safety of germinated brown rice products,provides a new idea for processing of germinated brown rice.
