Abstract
Taking lettuce as material,with chlorophyll content,vitamin C content,soluble sugar content and weight loss as index,the fresh-keeping effect of coating with sodium alginate on lettuce were studied.The results indicated that the 0.2g/L of sodium alginate could slow down weight,the reduction of chlorophyll content,the increasing of soluble sugar, the reduction of vitamin C content.Coating with sodium alginate could enhance the apparent quality of lettuce to have the fresh-keeping effect.
