Abstract
Using Chilli as raw material,Microwave-assisted extraction of capsaicin was carried out,and the conditions were studied in the article by response surface method.The results showed that the influence of temperature,extracting time and microwave power,were significant on capsaicin extraction.The optimum condition of extraction was obtained as follows:the concentration of ethanol was 65 %,microwave power was 400W,extraction time was 3.5min,extraction temperature was 90℃,and the ratio of solid-liquid 1:10.Under the optimal condition,the extraction percent of capsaicin was 5‰.
