Abstract
In order to find secure,stable natural edible pigments,pigments were extracted from three kinds of different color leaves of Loropetalum chinensis by using different solvents,and their content and physicochemical properties were analyzed in the experiments.The results showed that the anthocyanin and total flavonoid contents in red leaves were higher than that in green leaves,which were appropriated to extract and apply in acidic conditions of water.While chlorophyll and carotenoids contents in green leaves were higher than that in other leaves,which were appropriated to extract using acetone in neutral or weak alkaline conditions.
