Abstract

Taking wild Cichorium intybus Linn as the material,the nutritional components of wild Cichorium Intybus Linn.were studied.The results showed that content of protein in wild Cichorium intybus Linn.was 2.29%.Soluble sugar,vitamin C,carotene,citric acid,malic acid and fumaric acid were respectively 50.8,11.0,9.9,0.3,113.4 and 19.3 gram per 100gram fresh vegetable.
