Abstract

The contamination of mycotoxins in grains is a worldwide problem.Mycotoxins are mainly produced by toxin-producing fungi which may infect cereal crops in the field,contaminate the grains during storage or during processing.Mycotoxin-contaminated grains can cause servere or chronic diseases in animals and humans.The article summarizes various strategies the strategies to control mycotoxin production and ways to lower mycotoxin contamination,such as inhibiting the fungal growth and infection,physical removing,chemical absorption and biological degradation of the mycotoxin.The application prospect of those methods were analyzed as well.
