Abstract

Objective The antioxidative activities in vitro of chitosan,caboxymethyl-chitosan(CM-chitosan),oligo-chitosan,N-acetyl-glucosamine(NAG) and glucosamine hydrochloride(GlcNH2.HCl) were investigated.Methods Phenanthroline-Fe2+ method was used.Results The results showed that in the setting concentration range,the antioxidative activities increased with the elevation of concentration.The activity of scavenging hydroxyl free radical of chitosan and its derivatives was that oligo-chitosan chitosanNAGGlcNH2.HClCM-chitosan and the highest rate of hydroxyl free radical-scavenging of 0.32 mg/mL oligo-chitosan could be 97.81%,which was similar with the activity of 0.64 mmol/L vitamin C.Conclusion Our work provided the theory basis for further application of chitosan and its derivatives on food and drug.
