Abstract

To extract protein from soybean powder with hydrolysis method by adding efficient protease and trypsinase,the parameters such as the reaction temperature,substrate concentration,reaction time,pH,enzyme dosage and the time interval of adding enzyme were investigated,and the relationship between soybean peptide content,protein hydrolysis degree and the influencing factors were analyzed.The result showed the optimized conditions were:temperature of 45℃,pH 7.5,water added of 600 ~ 700 mL,enzyme amount of 0.2 g for both efficient protease and trypsinase,reaction time of 8 h,enzyme adding interval of 3 h.Under these conditions,the protein content in the enzyme reaction reached 85%,and the degree of hydrolysis reached 17.72%.
