Abstract
The extraction conditions of pigment from Pyrostegia ignea were discussed and the optimum extraction conditions were determined by orthogonal test. The result of orthogonal test showed that the optimum extraction condition were: extraction solution of ethyl alcohol, the ratio of materials was 1∶30(g/mL), extracting at 80℃ for 3h. The stability of Pyrostegia ignea pigment was discussed under the different conditions such as temperature, pH, light, oxidation, reductive and food additives. The results was that reductive, strong acid and alkali would harmfully affect the stability of the pigment, and the pigment had fine stability with others conditions.
