Abstract
[Objective]To analyze polysaccharide content in different varieties of jujube fruit,screen out jujube fruit resources with high polysaccharide content and promote the comprehensive development and utilization.[Method]Taking Hunan local variety egg jujube,candied jujube,medicinal jujube,long jujube etc.16 kinds of jujube cultivars as materials,the polysaccharide content in different jujube cultivars were determined by sulfuric acid-phenol method.[Result] The highest and the lowest polysaccharide content in different varieties of jujube fruit reach 3.9 times,among which,millet jujube and filial generation candied jujube has the highest polysaccharide content of 9.75%,9.06%respectively; The secondly were the female candied jujube,acid yuan jujube,medicinal jujube,long jujube,Yuquan No.8 and southern Dongzao,respectively,8.82%,6.20%,5.89%,5.56%,5.54%,5.23%,and the light skin jujube content is the lowest,only 2.45%.The polysaccharide content in different varieties of jujube fruit has significant differences.[Conclusion]The study showed that,sulfuric acidphenol method is stable with high accuracy,precision and good reproducibility,which can be used for determination of polysaccharide content in jujube; meanwhile,jujube has higher polysaccharide processing and utilization value,and is worthy of development.
