Abstract
This paper studied immobilized factors and fermented characteristic of lactic acid bacteria. Results showed, the best immobilized condition: alginate sodium2 %, lactic acid bacteria :water 1:1, CaCl2 1.5 % , immobilized temperature 42 ℃.Content the lactic acid bacteria of the immobilized 4.59×109 cell/g. Lactic acid bacteria immobilized had good fermented characteristic.
