Abstract
The nitrate and nitrite contents of 26 species vegetables'294 samples from the 9 townships of Pudong New District were analyzed by ultraviolet spectroscopy.The results showed that the nitrate contents of leaf vegetables from different townships were slightly different but generally high; The descending order of the nitrate contents was leaf vegetablescucurbitsleguminous vegetablessolanaceous vegetables,and their acceptance rates in nitrate content were 39.49%,42.86%,62.50% and 88.24%,respectively.The acceptance rates in nitrite content were 100%for all vegetables.The average nitrate contents of greenhouse-grown vegetables were higher than those of field-grown vegetables except Brassica pekinensis.
