Abstract

This paper introduced the extraction of apple polyphenols by ultrasonic wave as well as the kinetics properties of scavenging DPPH radical.Comparison of the anti-oxidant ability of apple polyphenols to tea polyhenols,grapestone polyhenols and BHT was also presented.The results showed that the apple polyphenols can scavenge DPPH radicals as quickly as grapestone polyhenols and has a promising outlook.
