Abstract
The elimination effect of tea extract on nitrite in meat products was studied.The study aimed to improve the food security of meat products.According to effects of extracting temperature,extracting time,extract doses,reaction time and the pH of reaction solution on eliminating nitrite,the optimum elimination conditions of tea extract were determined though L16(44) orthogonal test.The optimum conditions of tea extract were extracting at 90 ℃ for 60 minutes(pulp: water was 1∶10),12 mL extract,reacting for 20 minutes,the pH value of the reaction solution 5.0,Scavenging rate of the nitrite ups to 56.83 %,and elimination rate of the nitrite in meat products(20 g) could achieve above 44 %.The study provided theoretical reference for the application of tea extract to the practical meat products.
