Abstract
The effects of pH value,temperature,light,H_(2)O_(2),Na_(2)SO_(3),Vc,glucose,sucrose and sodium benzoate on stability of red pigment from Altemanthera dentate 'Ruliginosa' were studied.It was indicated that red pigment had good resistance to heat but its stability was slightly influenced by light,oxide and reductant.Its absorbance peak was not changed under different pH values,and the maximum absorption wavelength was still at 530 nm.Vc and sucrose had better effects on stability of red pigment,and showed colour maintenance effect.Glucose and sodium benzoate had no harmful effect on stability of this red pigment.
