The anthocyanin content and antioxidant analysis of different varieties of purple lettuce

Abstract

To investigate the character of anthocyanin accumulation and oxidation-reduction capability of purple lettuce, 10varieties of purple lettuces derived from domestic and abroad were measured to analyze the anthocyanin content,DPPH·removingrate,total antioxidant capacity and total reductivecapacity.The results showed that most lettuces with dark color have more anthocyanin content.Anthocyanin content of S55is the highest,the lettuce with highest total antioxidant capacity is S44, and the variety with highest total reductive capacity is S55.Lettuces with dark color have high anthocyanin content.Generally, the majority varieties of purple lettucewith more anthocyaninhad bigger capacity of oxidation-reduction capability.The comprehensive evaluation indicated that the cultivar S55showed the higher DPPH·removing capacity,total antioxidant capacity and the highest total reductive ability,showing the best antioxidant effect among the ten tested cultivars.
