Abstract
According to the scavenging activity pro-duced by Fenton reaction,trypsin protease and neutral protease,whose hydrolysates had higher scavenging ac-tivity,had been chosen to the good hydrolytic enzymes.Furthermore,the optimal hydrolysis,which scavenged most effectively hydroxyl radical was determined by or-thogonal design.The hydrolysates,for trypsin pro-tease,were hydrolyzed for 3 h with an activity of al-calase of 900 U/g,at pH=6.5 and 45 degrees ℃.And for neutral protease hydrolyzed for 2 h with 600 U/g,at pH=6.5 and 50 degrees℃.The ratio of muscle to water was 1:4,both for neutral protease and trypsin protease.
