Abstract
Peanuts are one of China's six major oil crops.The proteins,which was variability in peanut oil extraction process a result of high temperature and pressure,is difficult to be used.This study compared the Alcalase enzyme,N120P,and protamex on peanut meal in the experimental results,experimental results prove that the best protamex,optimal conditions determined protamex:the amount of 1 800 U/g,hydrolysis time of 90 min,hydrolysis temperature of 55 ℃,pH6.0,the degree of hydrolysis 1:9(g:g).Determination showed that the molecular weight of peptides concentrated in the 800 u-1 200 u.
