Abstract
OBJECTIVE To compare the stability of Ginger oleoresin/β-CD inclusion complex with Ginger oleoresin.METHODS The stability experiment was carried under the storage conditions of high temperature(40℃,60℃,80℃),high humidity(RH 75%,92.5%)and high light(4×103 lx).The contents of total gingerol were measured by ultraviolet spectrophotometry.RESULTS When they were stored under above conditions for 10 days,the stability of Ginger oleoresin/β-CD inclusion complex was obviously higher than that of mixture,and exhibited significant difference by paired sample T-test(P0.05).CONCLUSION The β-CD inclusion complex could obviously increase the stability of Ginger oleoresin.
