Abstract

Pigment was extracted from black bean peel by microwave-assisted extraction.The stability of the pigment in different pH,different light,different heat treatment,oxidant,reductant and metal ions were studied.The results showed that the pigment was stable in acid and low temperature.While oxidant,reductant,light and some kings of metal ion affected the stability of the pigment.
