Abstract
[Objective] To explore the antioxidant activity of anthocyanin in purple sweet potato. [Method] The anthocyanin extracts from purple sweet potato were prepared by means of microwave heating -acidified water extraction technology. After the aged mice were given anthocyanin extracts at the concentrations of 100,500 and 1 000 mg/kg by gavage for 30 d,the anti-oxidations in serum were determined. [Result] After given anthocyanin extracts at concentration of 1 000 mg/kg by gavage for 30 d,the anti-aging indicators of aged mice (at 12 months old) agreed with that of 5-month-old mice in vivo in control group. [Conclusion] The anthocyanin extracts from purple sweet potato has obvious anti-oxidation and can delay aging.
