Abstract
The effect of microwave-assisted extraction conditions on extraction ratio of flavonoids from asparagus flour were studied.The optimum conditions were obtained as follows: extracting temperature 60℃,microwave power 200W,extracting time 100s and the ratio of asparagus to water 1:25(w/v).Under these conditions,extraction ratio of flavonoids was 4.24%.The average recovery rate was 97.75%.The standard deviation was 7.1×10-3 and the variation coefficient was 1.16%.
