Abstract
Conjugated linoleic acids (CLAs) comprise a family of positional and geometric isomers of linoleic acid (18:2n-6 LA) that are mostly derived from ruminant animals fat, in particular dairy products in nature. CLAs can be formed by biohydrogenation and isomerization of polyunsaturated fatty acids (PUFAs) (predominantly linoleic acid, linolenic acid) in rumen. In addition, they can also be formed by delta-9 desaturation of the vaccenic acid (trans-11-18:1) in animal cell. The cis-9, trans-11 CLA isomer is the major isomer found in ruminant fat; this isomer typically represents 80% to 90% of the total CLA in milk fat, and its proportion in beef fat is less. Many natural factors and manual means can affect the content of CLA in ruminant animals.
