Abstract
The changes of main organic material contents in navel orange (Citrus sinensis) fruits during ambient temperature storage were studied. The results showed that soluble solids content in fruit increased during early storage and decreased after 10 days, citric acid content decreased significantly, TSS to TA ratio increased remarkably, content of Vc had different variations among 3 varieties and soluble protein content tended to increase. The indexes among 3 cultivars at different periods varied remarkably.
