Abstract
The octenyl succinic acid modified starch (OSA) was prepared from waxy maize starch with octenyl succinic anhydride from different conditions. The optimal parameters of reaction were determined by the orthogonal test. The paper mainly discussed the effects of conditions of esterification on the degree of substitution. The test results showed that the concentration of starch slurry, temperature of reaction, pH of reaction system, and time of reaction have great effects on the degree of substitution when the amount of OSAnh was kept constant (3% of dry basis of starch). The samples with different DE values are abtained after OSA is treated with alpha-amylase for different time.
