Abstract
In order to improve the stability of the characteristic traditional food of Dagezha,the formula and process conditions are optimized in this paper. The formula and process conditions:the ratio of raw materials of green beans,rice beans and flour is 1∶1∶1,Turmeric accounted for 0.4% of the basic raw materials,water accounted for 140% of the basic raw materials,time sharing system is 3 min,product moisture content is about 70%,production rate is more than 80%.Using the special preservative G5 of Dagezha and special preservation bags,cooking for 15 minutes,at room temperature storage for 20 days,the quality is normal,the number of total bacteria is detected in line with the national food safety standards (104cfu/g).
