Abstract

Techniques for prepation of soybean peptides through hydrolysis of soybean protein isolates with S9 alcalase were studied.The study mainly focused on effects of concentrations of substrate,treating temperature,enzyme concentration and treating time.The optimum conditions were obtained with orthogonal design and statistical analyses,which were with substrate concentration at 4%,treating under 60℃ for 120 min with addition of S9 alacalase by 3000 U/g.
