Abstract
To ACE inhibition rate index,the results show that the hydrolysis products obtained by alkaline protease is much higher than the neutral protease,papain and trypsin.The method of combining orthogonal test and Box-Behnken experimental further optimize hydrolysis condition of alkaline protease,then determined the optimal hydrolysis conditions of alkaline protease were:Temperature 60 ℃,5% substrate concentration,enzyme concentration was 3000 U/g,hydrolysis time was 4 h,pH 8.1.Validation experiment indicated that the product of ACE inhibition rate was 51.91%.
