Abstract
Walnut protein was hydrolyzed with neutral protease.The effects of enzyme pH,temperature,time on enzymatic hydrolysis,substrate concentration and enzyme concentration were discussed.The optimum condition for producing peptides from walnut protein by neutral protease were found out through orthogonal experiment pH of 6.0,the temperature of 40 ℃,hydrolysis time 3.0 h,substrate concentration of 0.7 % and enzyme concentration of 7 501 nkat.The degree of hydrolysis was 48.53 %.
